Oil production from the fruit is a demanding process: Moroccan women extract the nut from the flesh, roast and grind the kernels and add water to the crushed seeds; rinsing subsequently separates the floating oil from the water. About 100 kilograms of seeds are needed for just 1 to 2 kilograms of oil.
