Tilapia Crusted With Almonds Recipe #91540

I made this with concerns of getting more Calcium into my diet. Almonds have 80 mg per 1 ounce. The almonds toasted up so nice giving this dish great flavor.
2 tilapia fillets
1/4 cup flour
1 egg, lightly beaten
1 cup sliced almonds
salt
pepper
Old Bay Seasoning
1 lemon
2 tablespoons butter
1 tablespoon olive oil
2 scallions, sliced

2-4 servings Change size or US/metric

20 minutes 5 mins prep

  1. Season tilapia with salt, pepper and old bay.
  2. Dust with flour then dip into egg.
  3. Press almond slices into the fish.
  4. Heat butter and oil in an oven proof pan.
  5. Carefully (so not to lose any almonds) place fillets into hot pan brown for 1 minute and flip gentle (again so not to lose any almonds) squeeze half of the lemon on the fish and place in a preheated 350 degree oven for 10-15 minutes.
  6. Remove gently to a platter squeeze remaining lemon.
  7. Garnish with scallions and serve.

**** Had a bit of a problem getting the almonds to stay in/on the tilapia and a lot of them fell off in the pan. Is there a secret to this that I need to know. However it was very good. — May 15, 2005

***** Yummy dinner! I cooked them in a pan in batches (my tilapia fillets are very thin so I cooked 5) and then transfered them to a baking pan. I drizzled what was left in the pan over them. I even forgot the lemon juice and it was excellent! — Oct 25, 2004, 2 members found this helpful
