I have one Asian persimmon. American persimons are extremely astringent like 
a tree ripened olive if you have ever tried to eat one.  Are you sure the 
American is the kind you want? My tree is fairly small tree, evergreen, 6-7 
feet tall, 4 foot breadth, has set up to a dozen full-sized, tasty fruit for 
several years. I rairly get to eat one of them (I would rather eat a ripe 
peach) because the woodpeckers have a better ripeness detection system and 
they usually get there first. They skillfully hollow out the entire interior 
leaving only a shell hanging on the tree. I havent checked on polination but 
have always assumed that it is self polinated.

This tree is in the ground but I am quite sure one would do fine in a 15 gal 
pot with a well-drained potting soil preferably in full sun for no less than 
half day. I don't know its chill factor but, unless my tree is a freak, the 
species will bear here.
