You probably can't tell from by examining the tree until it is mature enough
to bloom. You could try specifying at the nursery when you but your tree.
They should know.
According to the rather lengthy (dot pdf 1.3 MB) article at

rootstocks for commercial production are grown from seed, then a clone from
a female tree is grafted onto it. But all of the carob trees I have
encountered in the valley emitted an offensive odor.
