I am trying to preserve the parsley I am growing. I cut it, cleaned the bugs off it, tied it in a bunch and hung it upsidown for a couple of weeks. When I was sure it was completely dry I crumbled the leaves and put them in a pint jar and dry air sealed it. Two weeks later I opened the jar to add more to it but it smelled terrible. What did I do wrong? Is there something additional or different I should be doing?
